There's really only two things to be done when bananas are totally past it.
One can feed them to the compost [ aka Rosie, Rowan, Ruby and Robbyn ]
or
one can make banana cake
Given that Ms Tara and her current knitting are venturing hitherwards from deepest, darkest Bendigonia this evening, I went for the cake option.
Sorry goat girls, you miss out.
Bewdiful Banana Cake:
2 1/2 cups of self raising flour
3 medium or 2 large over ripe bananas
1 cup castor sugar
1 egg
3/4 cup of low fat milk
1/4 cup oil
1/4 teaspoon ground ginger
a shake of nutmeg [ optional]
Mash the bananas.
Mix all the ingredients and pour into a loaf pan.
Bake for 50 minutes in a moderate oven [ about 160C ] until an inserted skewer comes out clean. Let sit for 10 minutes before turning onto cake rack for cooling.
Ice [ frost ] if desired
Of course to do that you actually have to hold off on the eating until it's cooled down, so icing rarely [ as in NEVER ] happens around here.

ReplyDeleteI had three sheets of puff pastry tonight and used two in a rectangular glass whatever and used up all the odd things that were a day or two out of date like Mascarpone and baby bocconchini...bet that is spelt incorrectly.....ha I looked them up in Google.
ReplyDeleteI know the spell check says spelt is wrong.......but I can be original.
Anyway I threw ricotta and all these odd things in with eggs and put it over the sprinkled bocconchini and bacon. Then I had a little mix left over and I had used the third sheet for a pie crust so I grabbed a tin of pie peaches, that needed using also, some slivered almonds, then saw a banana that I figured would not be wonderful tomorrow although it looked OK.....and as I cut it up I was so glad I had used it...put the left over mix over it all and it was rather yummy.
Now my fridge has to be healthy.
So that was my take on the banana on the bench.
There was a wonderful shop in Lygon St Carlton Nth when I used to teach around the area and often going from school to school I would happen to stop there for some lunch..they have fantastic quiches......finally I asked the secret....she said equal quantities of cream and eggs...she was oh so correct.
